Persephone

This cocktail is themed around the Greek Mythological story of Persephone. Hades, God of the underworld, falls in love with Persephone (also known as Kore prior to these events) and lures her into his realm. During her time there she eats a handful of pomegranate seeds which results in her being forced to remain in the underworld due to consuming the fruit.

Demeter, Persephone's mother, is distraught upon hearing the news. As the Goddess of Agriculture, her sadness results in the world's environment to change. The gods agree that as Persephone had only eaten a handful of the seeds and not the whole fruit that Persephone may divide her time spent in the underworld and thus time away from Demeter is what causes the seasons to change from Spring, Summer, Autumn and Winter.

The cocktail itself is a floral and red-fruit twist on a Negroni. Ki No Bi Gin due to it tying into the beauty of seasons, as well as Sipello which utilises great naturally grown produce to make a complex aperitif. Pama Pomegranate Liqueur adds the not pomegranate flowers but also floral elements like elderflower.

The garnish of expressed grapefruit oils adds to the aroma of the drink and the frozen redcurrant resembles the seeds that Persephone consumed.
