When the world went into lockdown as a result of COVID-19, I started looking up and researching making cocktails. I came across Hidetsugo Ueno and started to read about Japanese bartending culture, as well as technique and from that point onwards I decided that this was what I wanted to do for a career. BAR HIGH FIVE is the bar that he owns and was awarded in 2020 by the World 50 Best Bars the ‘Heering Legend of the List’. The cocktail presented as part of the announcement was ‘The Hunter’, which is a forgotten classic that is Bourbon based with Cherry Brandy and Orange Bitters.

This cocktail is a twist on that, utilising a brandy base and highlighting the various flavours we can taste from brandies. It is a stirred down drink served straight up in a Nick & Nora glass with an orange coin to express oils and garnish.
